Ingredients

  • 3 cups cooked Japanese short-grain rice (about 450 g, chilled)

  • 2 large eggs

  • 100 g cooked ham, finely diced

  • 2 tablespoons finely chopped green onions

  • 2 tablespoons neutral cooking oil

  • 1 tablespoon soy sauce

  • 1 teaspoon sesame oil

  • ¼ teaspoon salt, or to taste

  • ¼ teaspoon ground black pepper

  • 1 teaspoon minced garlic (optional)

  • Fresh microgreens or chopped green onions, for garnish (optional)

Instructions

1. Prepare the Rice: Use cold, cooked rice for the best texture. Break up any large clumps with your fingers or a fork. If using leftover rice, ensure it has been stored safely in the refrigerator.

2. Prepare the Ingredients: Dice the cooked ham into small pieces. Finely chop the green onions and mince the garlic if using. Crack the eggs into a small bowl and beat until the yolks and whites are fully combined.

3. Scramble the Eggs: Heat 1 tablespoon of neutral cooking oil in a large skillet or wok over medium-high heat. Pour in the beaten eggs and gently scramble for about 1–2 minutes until just set. Transfer the eggs to a plate and set aside.

4. Cook the Ham: Add the remaining tablespoon of oil to the same skillet. Add the diced ham and stir-fry for 1–2 minutes until lightly browned and fragrant. Add the minced garlic, if using, and cook for another 20–30 seconds.

5. Stir-Fry the Rice: Add the chilled rice to the skillet. Increase the heat slightly and stir-fry for 3–4 minutes, breaking apart any remaining clumps. Toss continuously so the rice heats evenly and develops a light, fluffy texture.

6. Combine the Ingredients: Return the scrambled eggs to the skillet. Add the chopped green onions, soy sauce, salt, and black pepper. Toss everything together until evenly combined and heated through.

7. Add Sesame Oil: Turn off the heat and drizzle the sesame oil over the fried rice. Gently toss to distribute the aroma and flavor.

8. Serve: Divide the fried rice between two serving bowls. Garnish with fresh microgreens or additional green onions, if desired. Serve immediately while warm.
